Recipe: French Onion Pasta

This has become a family favourite on a rainy Autumnal day in the Cotswolds, and is so easy to make!

Ingredients:

Salt

Pepper

Olive Oil

15g Butter

4 White Onions, finely sliced

Garlic if you’re not allergic like me

150g dried Orzo Pasta

500ml Beef Stock

Lots of Parmesan

1/2 Lemon, juiced

Small Handful of Parsley


Method:

Melt the butter along with a drizzle of olive oil in your favourite pot.

Once melted, add the finely sliced onions with some salt and pepper. Keep on a low heat, stirring occasionally for around 1 - 1 and a half hours until totally soft and caramelised.

Scratch the bottom of the pan with a wooden spoon and add a splash of warm water towards the end.

Once soft, add the dried orzo and beef stock and stir. Bring to a boil, and the reduce the gentle simmer. Stir occasionally so the orzo doesn’t stick to the bottom of the pan.

Stir through the lemon juice, parsley and parmesan and season to taste.
